THURSDAY'S RECIPE PAGE: THE TWINKIE BURGER
Steve Ettlinger's book "Twinkie, Deconstructed" (Hudson Street Press), out next week, demystifies the iconic sweet's 39 ingredients chapter by chapter, telling how they're made and the sometimes explosive things for which they're also used. Here's a few of the snack's elements:

CALCIUM SULFATE
: Extract more water from this Twinkie ingredient, and it becomes plaster. "I love the idea that we eat rock like that," says Ettlinger, who notes that four other rocks (including salt and limestone) are in the recipe.

CELLULOSE GUM: This cooked goop from cotton lends slipperiness to the filling - as it also does to rocket fuel. It's also found in Starbucks low-fat latte, denture adhesives and ceramics glaze.

POLYSORBATE 60: Thick cream and egg yolks are nature's way of merging water and fat for creaminess. Polysorbate replicates this, but lasts longer. The emulsifier is made using explosive ethylene oxide. "They're using an explosive ingredient to make food," Ettlinger says. "That kind of blew my mind."
